From the Essential Mormon Cookbook- these mashed potatoes can be made a day or two ahead and be stored in the fridge (I did that last Thanksgiving and it worked out GREAT! They are very tasty too!)
5lbs potatoes, cooked and mashed
1 8 oz package cream cheese
1 cup sour cream
1/2 cup milk
2 tsp. garlic salt
pepper to taste
Combine mashed potatoes, cream cheese, sour cream, milk, garlic salt and pepper. Mix well and place in large, greased casserole dish. If making ahead, refrigerate. Otherwise, cover and bake at 325 for 45 minutes.
*if refrigerated first, let stand 30 minutes at room temperature and then bake as directed

Coffee Cake
1 box yellow cake mix
1 c. brown sugar
1 Cube (1/2 c.) butter, cut into sm. cubes
3/4 c. nuts
Cinnamon (to taste)
3 eggs, beaten slightly
16 oz. ctn. sour cream
Preheat oven to 350. Grease and flour a 9 x 13 inch pan. Stir together the brown sugar, butter (cut into small cubes), nuts, cinnamon and 2/3 cup of the dry cake mix. Set aside to use as the streusel for middle and top layer of cake. In a separate bowl, mix together the eggs, sour cream and the rest of the cake mix. Beat well. Spread half of the mixture into the bottom of the prepared pan. Sprinkle half of the streusel topping over the cake mixture for the middle layer. Spread another layer with the remaining cake mixture and then sprinkle the rest of the streusel topping on top. bake at 350 for 40 to 45 minutes or until done.
***We just had this at a family breakfast and it was sooooo good! (The kind of "good" that makes you crave it!)***
